Stretched curd cheese made with whole raw cow's milk.
The color of its crust varies between earth and light gray, the paste is compact and dark yellow in color.
Sapid and slightly spicy at the same time, with hints of cooked butter and with a good persistence. A real delicacy.
Aging takes place in caves of Roman origin, millenary, in tuff and stone, where an optimal microhabitat is created for the maturing of cheeses that acquire inimitable organoleptic properties and preserve all the properties and value of our milk unaltered.
